The capucho tomato, or “rebuçado” as it is known in the Azores, is rich in vitamin A, B and C, phosphorus and iron, benefits that are carried over to the jam. Produced without resorting to preservatives and dyes, it is possible to find whole tomatoes, which intensify its flavor.
